Oreo cookie cupcakes.

I had the most fun making these cakes. They are in short, Chocolate cupcakes filled with vanilla cream icing and iced with Oreo crumb buttercream. They were the best. Recipe up soon!

Wedding cake inspiration.

So the exciting news came today that my Aunt has decided she would like me to provide 200+ cupcakes for her wedding in June. It's going to be a relatively DIY wedding, with everyone pitching in to help with anything they can, so a lovely personal atmosphere is to be expected, and I think the cakes should be too.
It's still a couple of months away but I can't help getting inspired already.

Summer cravings.

With weddings and the promise of picnics and frozen cocktails I can barely wait for warmer weather, and with warmer weather come breezy clothes. These are my current cravings for summer, including Bakerella's Cake Pops book, that I literally cannot wait to get my hands on. In fact, I'm ordering this right now.

Volcano cupcakes.



Okay, i'm not going to lie here... 
This is what happened with the rest of the batter from the rainbow cakes.
And I have no idea how it happened, it was a complete accident as I didn't want to waste the left-over batter, so just layered it all into a cupcake case and popped it in the oven for about 25 minutes.

Rainbow cupcakes.

I'd searched around looking at recipes for rainbow cakes and have wanted to try them for SO long (I adore this cake by MyJuiceCup, although I fear a little too sickly sweet looking...) and I ended up sort of, well, winging it.

I made a simple vanilla cake batter* and divided it into 4 bowls, then coloured each separately. I poured a small amount of batter into the bottom of each mini silicone cupcake mold and popped them in the oven for 10-15mins.
Once they were cooled I trimmed the edges to straighten each mini-cake, then used a pink buttercream icing to stick a cake of each colour on top of each other. I left the little stacks to harden, then used the rest of the icing to completely cover the cakes and topped with sugar lump sprinkles.
I let these to cool in the fridge for a couple of hours to harden the icing a little before serving.



Creme Egg Cupcakes.

Simple vanilla cupcakes with a mini cream egg plopped into the middle of the batter, then covered with a thin layer of batter on top.
Baked for about 25mins and iced with chocolate buttercream.
